Foodie Thoughts | Tropical Cilantro Cooler

On this eve of Father’s Day weekend, I thought I would share this recipe with you. You don’t really need a reason to try it. But if you might need a reason, I’ve come up with this list. You should try this recipe if (A) you plan to soak up some sunshine by the pool, (B) you plan on soaking up some rays on the beach, (C) you are dreaming of a tropical getaway because A and/or B is not going to happen anytime soon. This drink is also a good ‘just because’ treat. Super light and refreshing. It has already been deemed the drink of Summer 2012 by my husband, haha.

Ingredients: 
1/2 cup raw or granulated sugar
1 cup cilantro
1 cup La Croix Coconut Sparkling Water (I buy mine from Target)
1 cup fresh lime juice (about 8 limes)
Lime wedges for garnish
Cilantro sprigs for garnish

Directions:
Make simple syrup: Bring sugar and 1/2 cup water to a boil in a small sauce pan. Once sugar has dissolved and liquid had become clear, remove from heat and add cilantro. Let steep for about 5 minutes. Remove cilantro sprigs, discard and let cool. Combine sparkling water, lime juice and cilantro simple syrup (about 10-12 Tbsp. Or until desired sweetness has been reached) in a pitcher. Serve over ice and garnish with sprig of cilantro and lime wedge.

*You can also use plain seltzer water, or lemon sparkling water.
*You can easily make this a grown up drink by adding your favorite spirits.

I think we will make a big batch or two, to celebrate the Dads this weekend.
