More often than not, when it comes to thinking about what to cook my family for dinner, I’m at a loss. Now that spring is here, I have to get my act together. This spring is a little busier than the ones that have passed. We have spring soccer, baseball for both boys and AAU basketball for both boys. All I can say about that is, “Thank you, God, for carpool!”
And with such a busy schedule it becomes all too easy to make things that are fast + easy, but may not be all that healthy. Plus, I find myself falling into cooking ruts and my children aren’t the biggest fans of that, haha.
So with one less activity to do tonight, I thought it would be the perfect opportunity to try something new for dinner. Something new and fun!
A couple of weeks ago I happened to be watching the Martha Stewart Show and she had Jim Lahey of the Sullivan Street Bakery on, and they were making pizzas. Not just any pizzas, Spring Pizzas using a no-knead crust. After watching the segment, I knew that me and my little foodies had to give that it a try!
The recipe couldn’t have been any easier. Just mix your dry and wet ingredients until it forms a ‘shaggy’ dough and let rest at room temperature for about 18 hours. That’s all it took to make our super delicious Wednesday night dinner. We had a mix of different ingredients, smoked mozzarella, asparagus, olives, mushrooms, fresh mozzarella, prosciutto and pepperoni.
This is one meal that my family wouldn’t mind having again AND again, haha. And with such a simple crust recipe, I don’t think I will mind either.
